Recipes from A Healthy Bay for Healthy Kids

 

Chesapeake Wrap

Servings: 1

1 tortilla, 8Ó wheat flour

1 tablespoon tartar sauce (recipe follows)

3 ounces lump crabmeat

2ounces shredded cheddar cheese, or other cheese

1/2 ounce spinach leaves, whole, well drained

2 tablespoons tomato, chopped

1/4 cup shredded lettuce

1 tablespoon salsa

chopped onions or green onions (optional)

 

Lay the tortilla flat.  Spread  the tartar sauce (or other dressing) on the tortilla.

Place the spinach leaves flat on the tortilla and put the shredded lettuce on the side closest to you.

Put the crab on the lettuce, making sure there is an even amount of crab from end to end on the lettuce.

Put the dices tomatoes on top of the crab Put the salsa on top of the tomatoes. Sprinkle with shredded cheese.

Wrap the tortilla by rolling the edge closest to you over the crab and lettuce mound and pulling the roll tight.  Continue to roll until the tortilla is a tight cylinder.

 

You may want to serve the tortilla with a Cilantro Sour Cream Dressing.

 

 

Tartar Sauce

Servings: 16

1 pint mayonnaise

2 ounces capers, chopped

3 ounces sweet pickle relish

2 tablespoons onion, minced (optional)

1 tablespoon fresh parsley, minced

1 tablespoon fresh dill, minced

1 tablespoon lemon juice

salt, to taste

pepper, to taste

Wocestershire sauce, to taste

Tabasco sauce, to taste (optional)

 

Stir all the ingredients together until well blended.  Chill thoroughly before serving.

 

 

 

 

You may want to try one of these in your wrap (instead of tartar sauce):

 

Remoulade Sauce

Servings: 50

1 quart mayonnaise

½ cup vinegar

2 ounces capers, chopped

1 tablespoon anchovy paste

1 tablespoon chives, minces

½ cup onion, minced

1 tablespoon Old Bay Seafood seasoning

2 ounces dijon mustard

 

Combine all ingredients and chill.

 

 

Pico de Gallo

1 cup roma tomatoes, diced

½ cup white onion, finely chopped

2 jalapeno peppers, finely chopped

2 tablespoons fresh cilantro, minced

1 tablespoon garlic, minced

½ teaspoon salt

½ teaspoon black pepper

1 tablespoon lime juice

1 tablespoon cider vinegar

1 teaspoon sugar

 

Seed and dice the tomatoes very fine. 

Combine all ingredients and chill for about ½ hour.
